Main features of the refrigerating cabinet for chocolate
In very widespread smaller chocolate production plants, a refrigerator is used to store the chocolate before packaging.
The refrigerator has an adjustable temperature (9-18 °C) and humidity (30-50 %), at which the chocolate does not oxidise and retains its shine.
